We catch semi-natural yamame trout and iwana char in the headwaters of the Chikuma River (Shinano River), one of Japan's longest rivers, flowing through Nagano Prefecture. Fingerlings released by the local fishing cooperative grow to maturity in the wild river environment.

Wild-raised yamame have firmer flesh and richer flavour than fully farmed fish, thanks to a natural diet of aquatic insects, mayflies, and small fish in the cold, clear river.

Fish are caught using a traditional cast net. From catch to delivery, the elapsed time is approximately 1.5 days — ensuring peak freshness when the fish reaches your table (Kanto area only).
